Keto Dream Cupcakes with Cream Cheese Frosting 🧁.

The perfect guiltless dessert for parties, after dinner or just for fun! These have less than .8 grams of carbs per cupcake, zero added sugar and they are absolutely dreamy!

You Will Need:

Cake Batter:

  • 3/4 cup butter room (temperature)
  • 1 cup coconut flour
  • 2 tbsp stevia in the raw OR splendid
  • 1/4 cup HONEYBEARD WHEY VANILLA 8 eggs
  • 1 1/2 cup sour cream
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup + 1 tbsp coconut cream
  • 1/2 tsp salt

Cream Cheese Frosting

  • 8 oz cream cheese (1 package)
  • 1/4 cup butter at room temperature
  • 2 tsp vanilla extract
  • 2 tbsp whipping cream
  • 1/4 cup coconut sugar blended into powder Juice from 1/2 lemon
  • A pinch of salt

Instructions

  1. Heat your oven to 350 degrees.
  2. In a large bowl beat the sugar and butter until creamy and well incorporated.
  3. Beat in the coconut cream. Add the eggs one at a time beating on medium high. Add the sour cream and the rest of the wet and dry ingredients. Mix for about 90 seconds or until well blended.
  4. Bake 15 minutes or until fully set. I like to stick a toothpick into the middle of one cupcake and if it pulls out clean without crumbs, that is a good indication they are done!
  5. Set aside to cool.

To Make the Frosting:

  1. Beat the butter and cream cheese, then add the vanilla and salt.
  2. Beat in the powdered coconut sugar, then beat in the cream.
  3. I like to put my frosting in the refrigerator to set for about 15-20 minutes before frosting. Frost your fully cooled cupcakes and watch them disappear.
  4. I like to sprinkle the tops with cinnamon, dark chocolate shavings, lemon or orange rinds for an extra decorative cupcake.

HARRY POTTER!! All of them! But if you’re not into magic, (who isn’t though?), I love Ulysses by James Joyce. I am an English Major, and this is such an interesting and difficult read.

I love mixing Honeybeard with oat milk or coconut milk, and often yogurt. But I really want to try making Erin’s carnivore cheesecake!

I love House and EDM music. I am also a huge fan of Machine Gun Kelly, Slaves and Senses Fail.
Favorite exercise?
I love back squatting and bench pressing! Due to my back injury, running is my go-to right now and it really helps me clear my head.
What is your why?
I have always focused on competition, but as of late, my goals are focused on getting as healthy as possible as I recover from my injury and try to be a positive influence for anyone going through the same thing. If I can provide positive guidance to anyone, that’s a huge win for me. Also, I have a lot of nieces and nephews and I just want to be a role model for them and show them what they are capable of if they work hard and stay focused.

Early in my career, I was blessed with leaders and people who helped me. I was 18, in the infantry, and was clueless about life and about adulthood. Protein Porridge! (yields 1)
  • 3/4 cup Riced Cauliflower, 1/3 cup diced Butternut Squash (can sub sweet potato or sprouted grain rolled oats), 1/4 cup liquid egg white, 1/4 + 1 tbsp water, splash of favorite milk or kefir (can be plant or dairy based), 1 scoop Honeybeard, 1/2 cup your favorite fruit.
  • In a small pot over medium heat, combine the riced cauliflower, squash or oats, egg white, and water. Gradually bring to a boil, stirring frequently. Allow for the mixture to boil until it thickens to desired consistency. Remove from heat and transfer to a bowl. Add in Honeybeard and a splash of milk. Stir it all together and top with your favorite fruit and a sprinkle of cinnamon. I love this for post workout recovery!

Beet Muffin ~ Totally gives off red velvet vibes. (yields 6; 1-2 muffins per serving)

  • 1 scoop Honeybeard (I recommend chocolate), 1 medium large beet (about 200 grams, steamed and diced), 1/3 cup gluten free sprouted rolled oats (or oat flour), 1 tbsp cacao powder, 1 large pasture raised egg, 1 tbsp coconut oil (about 15 grams, melted), 4 oz favorite milk (dairy or plant- based, I use Kefir), 1 tsp baking soda, 1 tsp vanilla extract, generous cinnamon; Optional: 1-2 tbsp cream cheese or plant based alternative for topping.
  • First blend the steamed beets and oats in a food processor until finely combined. Transfer to a large bowl and add all other ingredients, mixing and folding thoroughly to combine. Evenly distribute batter among 6 muffin molds and bake for about 20 minutes on 425. Allow to cool before removing from tin.

DEADLIFT. Make it heavy.
What is your why?
I'll be honest, because it's an important start of the story. When I first began to explore healthy eating and exercise, I had my sights set on changing my body. But I soon realized it was way more involved and intimate than skin-deep, it was soul-deep. What I was really changing was my belief and behavior. Here's how I see it, today. Time is going to pass, who I am – who you, who we are – when I get there is entirely up to me. I refuse to settle for the idea that my future is cosmic or circumstance. The power to look back on a life you are proud of, knowing that you squeezed every drop out of it, is in your hands. You just have to use it – moment by moment, choice by choice.
